The best banana bread

This is an old recipe that must be over 40 years old. The banana bread recipe is from my mother’s old recipe box. It was written on a faded index card with a red line above followed by blue lines below. This is a delicious and classic Mama banana bread recipe, and I highly recommend you try it.

Makes one loaf

2 cups of flour

1 teaspoon baking powder

1 teaspoon of baking soda

2/3 teaspoon of salt

1 cup of sugar

3 ripe bananas

1/2 cup canola oil

1 egg, slightly beaten

1 tablespoon of butter

Arrival instructions:

Preheat oven to 350 degrees F. Line a pan with parchment paper.

In a medium bowl, mix the flour, baking powder, baking soda, salt and sugar.

In another bowl, mash the bananas, then add the oil, egg and butter. Mix together until combined. Add the wet mixture to the flour mixture and mix just until combined.

Pour into the pan and bake for 50 minutes or until a tester comes out clean.
