Chinese Chicken Salad - Made with leftover rotisserie chicken, romaine, napa, crispy wonton strips and the best sesame ginger dressing ever!

Whenever I have some rotisserie chicken left over from this, I repurpose the leftovers to make my favorite Chinese Chicken Salad. A quality salad in a restaurant that really tastes much better at home.

Chinese Chicken Salad - Made with leftover rotisserie chicken, romaine, napa, crispy wonton strips and the best sesame ginger dressing ever!

Packed with romaine lettuce, napa cabbage, mandarin oranges, cilantro, green onions, salted cashews, green onions and of course the most crispy wonton strips. Store bought is fine, but nothing beats the homemade version.

Not to mention the perfect ginger sesame dressing that goes so well with it. The sauce can always be prepared ahead of time, hidden in the refrigerator before serving. And you can chew all the wonton strips while preparing.

  • 1 head Rumania, grated
  • 4 cups Shredded Napa Cabbage
  • 3 cups Leftover shredded rotisserie chicken
  • 1 (15 oz) tin Mandarin oranges, squeezed
  • ½ Goblet Chopped fresh coriander leaves
  • ½ Goblet Roasted salted cashews
  • 3 Green onions, thinly sliced
  • 2 cups Crispy wonton strips, Homemade or store bought
  • 2 teaspoons toasted sesame

For sesame ginger sauce

  • ¼ Goblet Rice vinegar
  • 3 spoons Orange marmalade
  • 2 ½ spoons canola oil
  • 2 ½ spoons Roasted sesame oil
  • 1 tablespoon Sodium-reduced soy sauce
  • 2 teaspoons Grated fresh ginger
  • 2 teaspoons toasted sesame
  • Kosher salt and freshly ground black pepper, taste
  • To assemble the salad, place romaine lettuce in a large bowl; Top with cabbage, chicken, mandarin oranges, cilantro, cashews and green onions. Pour the sesame ginger dressing over the salad and mix gently to combine.

  • Serve immediately, topped with wonton strips and sesame seeds.

For sesame ginger sauce

  • In a small bowl, whisk together rice vinegar, orange marmalade, canola oil, sesame oil, soy sauce, ginger and sesame; Season with salt and pepper, to taste.
