While in China a few years ago, visiting the Yanshu River, our river guide pulled his little boat into this little primitive village that had an outdoor restaurant, mostly for locals. We felt a little out of place, and had no idea what was on the menu, so we just pointed to what other people were eating and these pea seeds were one of the things that came up. I was stunned.

Pea sprouts are the young climbing pea tendrils, before they grow enough to produce pea pods. They taste like a cross between peas and spinach and are such lovely, delicate little creatures that I almost feel a little guilty eating them.

Ingredients in the pea shoot recipe

Sauteed Pea Shots Instructions

First step: Prepare your shallots and garlic and gather all the ingredients by the stove. The cooking part only takes 5 minutes, so be ready to go as soon as you heat up the pan.

second level: Heat the oil in a wok or a large pan over medium heat. Add the shallots and garlic and sauté for 2 minutes until they are fragrant and just golden, stirring often. Add the chili flakes and stir for 30 seconds. Add the baby pea sprouts.

I prefer the sweet taste of Mirin Here, it’s lovely – but Shaoxing A more traditional and less sweet wine. You are welcome to use Chinese Shaoxing wine, or cooking sherry.
