One of the most mentioned types is a crowd favorite among different ages – the humble and salty pinoy carbonara. Simply put, it is pasta made with a light and delightful sauce. And for this particular recipe, I’ve made cooking carbonara much simpler with a few common ingredients, and easy steps.
But as you may already be aware, in the Philippines, it is made with lots of cream to give it that unmistakable creamy and delicious quality. But some may not be aware that the original Italian recipe actually does not use cream. And it’s definitely simpler in terms of the ingredients needed. Let me show you what I mean by comparing these styles of carbonara creation.
Authentic versus Filipino style carbonara
Authentic carbonara
Starting with the original recipe, it actually gets its creaminess from just eggs and cheese. Authentic carbonara doesn’t actually use many ingredients. We just use pancetta to make our dish a little more filling and meaty. As for seasoning, we only have our cheese and eggs as mentioned before, and some salt and ground black pepper. But for all its simplicity, it is certainly not without richness. This authentic version definitely deserves a lot of love because it is able to show great taste with the small ingredients it has.
Filipino style carbonara recipe
On to the kind you may be more familiar with – a Filipino style carbonara recipe! It makes use of plenty of all-purpose cream, as well as a few extra spices like beef cube and nutmeg. Of course, this recipe wouldn’t be complete without the crispy bacon that contrasts perfectly with our smooth pasta. If you haven’t tried this version yet, I highly recommend giving it a try!
I also want to introduce you to another way to eat your carbonara if you are trying to avoid meat. This dish allows you to enjoy your pasta with some seafood.
Festive tuna carbonara
My festive tuna carbonara recipe is vibrant in both presentation and taste. It has a nice mix of toppings from pepper to bacon to, of course, tuna. This great combination makes it perfect for the holidays as well as any celebration you have planned in the near future. And by the near future, I do mean you can whip it up real quick. The cooking time for this is around 15 minutes since you will just combine these ingredients for the most part. There is also something really special about the salty and buttery taste of the tuna. It really adds a beautiful texture and flavor to our pasta that you won’t want to miss.
Now we can get back to making easy and delicious carbonara! Just follow these steps.
How to cook carbonara
For this you will need 300 grams of spaghetti. Now cook it as per package instructions. After that, filter the water you used, and put the spaghetti aside.
Grab a pan and let it heat up. Put 8 strips in the pan that you cut into ½ cm slices. Then just cook these until they get nice and crispy. Transfer it to a clean plate and set it aside as well.
Fry garlic, and prepare other ingredients
We will use the same pan to melt 1 tablespoon of butter. After melting, you can add 2 finely chopped garlic cloves. Fry it for 10 seconds, then combine ½ cup of sliced button mushrooms, as well as 4 tablespoons of all-purpose flour. Then just cook everything for 30 seconds while stirring.
Put one 68 gram package of Knorr cream of mushroom soup and 3 cups of water together. Mix them well, then pour the mixture into your pan. Continue to cook everything while stirring just until the sauce is as thick as you like.
Add ¼ cup grated parmesan cheese. Also sprinkle in ground black pepper as you prefer. So you can turn off your heat. Start tossing the pasta into the sauce, making sure you spread the mixture evenly. Then, you can simply transfer your dish to a serving plate of your choice. We’ll just put in our pre-cooked bacon, as well as some more parmesan cheese as toppings. So you’re done!

Pinoy carbonara recipe with ham and bacon
Instructions

Cook the spaghetti according to the package instructions. Filter the water and set aside.

Heat a pan. Add the bacon. Cook until crisp. Remove from the pan. set aside.

Melt butter on the same pan in which the bacon was cooked. Fry garlic for 10 seconds. Add mushrooms and all-purpose flour. Cook for 30 seconds while stirring.

Combine knorr mushroom cream soup and water. excite. Pour the mixture into the pan. Continue to cook while stirring until the sauce thickens to the desired thickness.

Season with Parmesan cheese and ground black pepper.

Turn off the heat and throw away the pasta.

Transfer to a serving plate and top with slices of bacon and more parmesan cheese.
