How to make baked eggs

First step- Grease potato slices and place on a lined tray. Bake in the oven for 20 minutes or until soft. While these are roasting, prepare the rest of the vegetables!

  1. Preheat oven to 400F.
  2. Grease potato slices and place on a lined tray. Bake in the oven for 20 minutes or until soft.
  3. Meanwhile, prepare and throw in vegetable slices Olive oil and Salt.
  4. Arrange spaces in the middle of the roasted potatoes (for the amount of eggs you use) and place 2 slices of pepper with a few slices of onion, break eggs into the center of the pepper/onion piles. Sprinkle the rest of the vegetables around the eggs. Add feta cheese if desired. Season the eggs Salt and pepper. Put back in the oven (still 400F) for 10-13 minutes (more if you want the yolks firmer).
  5. Remove when the eggs are done to your liking, sprinkle with fresh herbs, optional chili flakes, and serve immediately – see notes for the sauce.

Remarks

Feel free to substitute or add other vegetables: asparagus, broccoli, snow peas, green beans – any quick-cooking vegetable will work here!
