What is Sriracha?

Sriracha is a fermented hot sauce, with a medium level of heat. It consists of various red chilies, distilled vinegar and garlic. Named after Si Racha, a city in Thailand, this spicy spice is widely used in many Asian cuisines.

In our neck of the woods (San Diego) it’s called “rooster sauce” because of the rooster on the bottle.

A good substitute, since sriracha is hard to find lately, is sambal olek.

What is aioli?

Technically, it’s sriracha mayo, not aioli. Why? Classic aioli is an emulsion of olive oil that yields a thick, rich and aromatic spice. It’s not a mayo-based sauce. However, in recent years in our part of the world the two terms are used interchangeably.

It’s likely that when you order anything with “aioli” on it in the US (at a bar and grill, etc.), you’ll get a mayo-based sauce.

Sriracha Mayo vs Yum Yum Sauce

Both have mayonnaise as a base, but this is where they start to differ. Sriracha aioli uses sriracha to add heat while yum yum sauce is mild in flavor and gets its red color from a combination of ketchup and paprika.

Despite these differences they can actually be used interchangeably.
