Happy Father’s Day!!!

It’s probably not the first thing that comes to mind what to make for the men in your life. Personally my husband was and loves it. When you think of Father’s Day – I’m sure you think of grilling something, technically you could grill some fish and top it with this mango salsa. I’m pretty sure it will be a hit. But my husband asked for a greasy burger for today. So the kids and grandparents come for burgers later. The weather is pretty crappy outside and definitely not BBQ weather so I thought I’d try burgers. I have eaten them many times, I just never tried to make them myself; How hard can it be?

I think the hardest thing about making mango salsa; There was one nice and ripe find in the store. Second just cut it into slices. There is a specific way you should slice a mango. If you look at the mango there is a flat side that is placed on the counter. So you’re going to slice on both sides of the big seed in the middle. Then you can cut the smaller pieces so you end up with a total of 4 pieces, 2 large and 2 small plus the large seed you throw away. I make slices through the mango but leave the skin in a criss-cross pattern and then you can peel the skin off and slice the mango flesh into a square.

Baked cod and mango salsa

A simple and quick meal for every night

A fish

  • 1 1/2 pound Cod fillet Cut into 3-4 sized portions
  • Kosher salt and black pepper Season both sides
  • paprika If you want to add a little more seasoning

Mango salsa

  • 2 mature of mangoes Peeled and diced
  • 1/2 Red pepper cut into cubes
  • 1 fresh Lyme squeezed
  • 1-2 fresh Green onions cut into cubes
  • 1 teaspoon coriander Fresh and chopped

Sweet potato fries

  • Peel and slice one or two sweet potatoes into slices or chips. Add a little olive oil, salt and pepper plus a little fresh chopped rosemary. Place on baking paper and add to the oven with the fish. Takes about 20 minutes or longer if you want them a little brown.
