Served with a sticky, sweet and spicy dip, these chicken candies make a fun and interesting appetizer or party food. They are a little tricky to make, but they go down an absolute storm at any gathering.

Instructions

  • Take one of the chicken wings and place on a secure cutting board. Using a sharp knife, carefully cut the wing into three parts – slice at the joints. Discard the pointed ends of the wings.

  • Take the middle part of the wing and carefully cut the meat around the bone at the thickest end. You don’t want to cut any meat, you just want to cut it off the bone at one end.

  • Push the chicken meat on both bones, with the help of your fingers until the meat is pushed all the way. This takes a bit of effort, and you may have to carefully use your knife a few times to cut off any meat you can’t push down.

  • After the meat is pushed down both bones, the smaller bone can be removed. Simply pull and twist the smaller bone and it will come free.

  • Take the larger piece of chicken wing you cut earlier and cut the chicken off the bone – this time at the thin end. Push the chicken meat down with your fingers until the meat is pushed all the way.

  • Repeat with the remaining wings. You need chicken 20 lollipops in total.

  • Preheat the oven to its lowest setting – this is to keep the wings warm, as you will need to cook in two batches)

  • Heat the oil over medium heat in a large, thick pan suitable for deep frying, until it reaches 175C/350°F. Alternatively, you can use a deep fryer.

    Oil for deep frying

  • While the oil is heating, mix the cornflour, baking powder, garlic salt, pepper and paprika in a large bowl.

    60 grams (half a cup) cornflour (corn starch in the US), ½ teaspoon baking powder, 1 teaspoon garlic salt, ½ teaspoon ground black pepper, ½ teaspoon paprika

  • Place the chicken wings in a bowl and mix to coat evenly with the coating. Remove the wings from the bowl and place on a plate.

  • Add the flour, rice vinegar and water to the remaining cornflour in the bowl and mix with a balloon whisk until combined. It gives is the second coating to fly.

    60 grams (½ cup) plain flour (all purpose), 1 tablespoon of Chinese rice vinegar, 120 ml (½ cup) cold water

  • Dip a chicken wing in the wet batter and turn into a coating. Allow all excess batter to drip and carefully add to the hot oil for deep frying.

  • Repeat with the remaining wings. You should be able to cook up to 10 chicken wings at a time if your pan is big enough.

  • Cook for 6-8 minutes, moving the chicken in the pan several times to prevent sticking.

  • After cooking, remove the chicken from the oil and place on a baking sheet and put in the oven to keep warm, while cooking the second dish.

  • Repeat with the remaining wings.

  • While the chicken candies are cooking, make the sauce by adding all the sauce ingredients to a small saucepan.

    1 tablespoon ground ginger, 4 spoons of honey, 3 tablespoons light brown sugar, 4 tablespoons dark soy sauce, 2 tablespoons Sriracha chili sauce

  • Mix together and bring to a boil. Lower the heat and allow to bubble gently for 2 minutes, then turn off the heat.

  • Place the chicken candies on a tray or plate. If you want, you can wrap the ends of the bones with a little foil.

  • Serve the chicken candies with the sauce and garnish with a sprinkling of chopped spring onions.

✎ Notes

Is it possible to air fry instead of deep frying?
You won’t get the same crispness and golden color, but you can air fry the candies and they’ll still be pretty crunchy.
If you want to air fry the candies, Coat only with the dry coating (Do not add the regular (all-purpose) flour, the rice vinegar and the water).
Once the candies are coated in the cornflour coating, spray them generously with cooking oil, then air fry them (stand them up if you can) at 200C/400F for 20-25 minutes, until fully cooked. Be sure to move the wings around the air fryer basket several times during cooking.
