I originally posted this recipe in 2018 with the help of my sweet friend Christy Denny. She is the best and always has the best Healthy dinner ideas! Since then I changed the recipe a little, added a few more toppings, and they are better than ever. Zucchini Nachos are the perfect way to use up your summer squash and indulge in a slightly healthier version of nachos. Because honestly, who doesn’t love nachos?!

I love good food but I love it even more when it’s light and healthy…or at least healthy! These can be a great app for a game day or party, a quick lunch for mom (just make a smaller version), or make a huge pan for dinner for the family! Light, cheesy, good!

  • Zucchini – picked fresh from the garden or bought at the grocery store
  • Olive oil – helps cook the zucchini on the grill and prevents them from sticking
  • Salt and pepper – adds flavor
  • Garlic salt – adds flavor to zucchini
  • Chicken – You can use rotisserie chicken, roast your own chicken or use canned chicken
  • Barbecue sauce – choose your favorite barbecue sauce or make your own
  • Monterey Jack Cheese – We like Monterey Jack for nachos, but you can use any cheese you like
  • Blue Cheese Crumble – We love the creamy umami burst that the blue cheese crumbles add, and are totally optional if you have blue cheese haters in the house
  • Black beans – drain and rinse the beans so they don’t add moisture to the nachos
  • Grilled Corn – You can grill your own corn on the cob or buy grilled corn from the store
  • Tomato – OK, I know there are no tomatoes in these pictures, but I love some sliced ​​tomatoes on top
  • Pickled Onions – These are quick and easy to make and add the best burst of flavor
  • Red onion – cut into cubes and sprinkle on top
  • Blue Cheese Sauce – I linked to our homemade sauce, but you can also buy your favorite brand

How to make zucchini nachos

Zucchini nachos are so simple to make. Even this Cheesy BBQ Chicken Zucchini Nachos recipe! We like to roast the sliced ​​zucchini first and pile them with the toppings and put in the oven for a few minutes to melt the cheese and get everything crispy.

Can you make zucchini nachos ahead of time?

You can definitely save some time whipping these up BBQ Chicken Zucchini Nachos By using pre-cooked and shredded rotisserie chicken or shredded and canned chicken from Costco. No shame in my game here – I use this stuff regularly. Life is busy, so take all the shortcuts you want!

It is not a good idea to prepare zucchini ahead of time because it cools quickly and becomes mushy.

Also, you can keep these super simple with just the chicken, cheese, and blue cheese or you can load them up with even more toppings!

Toppings for nachos

Maybe you want to add some avocado, jalapenos or bacon! We keep them pretty basic so our kids are more likely to eat them. But then again, you can also just make a few different batches to suit everyone’s taste!

If you’re worried that the kids won’t really like these nachos, you can first try cooking some of the zucchini with a little cheese on it, and serve the BBQ chicken separately to the kids. Or, these can be an adults-only nacho party and you can make the kids their own version with regular tortilla chips!

Can zucchini be frozen?

This looks like such a simple meal to cut, freeze and throw in the oven anytime, but it really doesn’t freeze well. There’s too much water in squash to freeze unless it’s butternut squash or shredded zucchini, but even then it gets a little crazy to try because of all that water.

Description

Indulge in nachos with these Cheesy BBQ Chicken Zucchini Nachos! This is a healthy dinner idea that the kids will love just as much as the adults!

  • 3 Zucchini, medium to large
  • 3 spoons Olive oil, Especially virgin
  • salt + pepper, taste
  • 1/4 teaspoon garlic salt
  • 12 courage chicken, I prefer to use rotisserie chicken or the grilled chicken I linked to here
  • 1/2 Goblet barbecue sauce, Plus an extra drizzle over the top
  • 3/4 Goblet cheese, Grated Mexican Jack or Monterey
  • 1/3 Goblet Blue cheese crumbles
  • 1 tin black beans , squeezed
  • 1 ear Grilled corn, or 1 cup frozen grilled corn (most stores, even Costco and Trader Joe’s sell this now)
  • 1 A large tomato, Cut into cubes, *optional
  • Pickled onions
  • 1 tablespoon red onion, ground
  • Blue cheese sauce
  • Heat oven to 425 and heat grill to medium high heat.

  • Wash and dry the zucchini. Slice into 1/4 inch rounds. Place in a medium bowl and mix with olive oil, a little salt and pepper and garlic salt.

  • Grill until grill marks appear, flip and grill again, about 3 minutes per side. Remove to a cookie sheet.

  • In another bowl, mix the chicken and barbecue sauce until the sauce is evenly distributed.

  • Remove the zucchini chips from the oven. Cover the barbecue chicken with grated cheese, then top with blue cheese crumbs, black beans, diced tomatoes and roasted corn.

  • Put in the oven for 7-10 minutes or until the cheese melts. I like to turn my oven to broil at the last minute to get the cheese nice and bubbly!

  • Remove from the oven and serve with an additional drizzle of barbecue sauce and bleu cheese sauce and sprinkle with diced tomatoes, onions and cilantro!

  • You are welcome to pamper them with any other toppings you have on hand: avocado, green onion, chopped lettuce.
