It was regular on our summer barbecues and I loved the combination of sweet sultans and salty peanuts – even as a kid.

Mom still occasionally puts out this recipe today.

And with good reason. This simple combination of flavors is no less good today.

Ingredients for curry rice salad

To prepare this salad you will need:

  • 2 cups cooked rice (cooled and made from about 2/3 cup uncooked rice)
  • 1/3 cup sultanate
  • 1/3 cup roasted and salted peanuts
  • 2 teaspoons curry powder Cain (or similar curry powder)
  • 2 tablespoons olive oil (or canola oil or your favorite oil).

Stir and go

To make this salad, you just mix all the ingredients together and you are ready to go.
