Tomato Cucumber Salad aka My Go-To Salad

I don’t know about you, but I am head over heels in love with this salad! This is a very basic recipe that I have been making for years. It tastes better the longer it sits and pairs perfectly with almost any main dish. Whether you make it with fresh vegetables grown from your garden in the summer or store-bought vegetables in the winter, I guarantee that my version of Cucumber Tomato Salad will be one of the best salads you’ll ever eat. Throw it together on the night shift as your side salad for dinner.

How to make tomato and cucumber salad

Since this is a must-have no-cook recipe, it’s probably one of the easiest recipes on my site! Cut and slice the vegetables, add the sauce and that’s it!

Prepare your cucumbers + tomatoes

Wash your English cucumber and tomatoes. Cut the cherry tomatoes in half and slice the cucumbers into half moons. I like to cut my cucumbers a little thinner, but feel free to keep this salad nice and flexible. Also, slice your red onions and add them to the bowl.

Should I use English cucumbers?

No, feel free to use any cucumber you can find! I definitely prefer the English (or greenhouse) cucumbers because you don’t have to peel them, they are longer, thinner and sweeter than a regular cucumber you would get in the store, plus they are all seedless. Yes, they have a higher price tag, but for good reason! You will fall in love with English Cucumbers.

If you prefer a regular cucumber, be sure to peel and remove its seeds.

Can’t I just use regular tomatoes? Why use cherry tomatoes?

I took great care in choosing which tomatoes I would prefer to use for this salad. Since tomato and cucumber salad is basically just two ingredients with some red onion and homemade dressing, the cucumbers and tomatoes should definitely be delicious. In my opinion, Cherry and grape tomatoes are sweet and delicious all year round. I live in a place that has four seasons and I can’t grow delicious garden tomatoes in January, unfortunately. In the winter and sometimes even in the summer, store-bought roma tomatoes, beefsteak tomatoes, and “on the vine” tomatoes can be a little grainy. The quality decreases in the winter months. But, I’ve found that cherry and grape tomatoes are great regardless of the month I buy them. So that’s what I recommend using in this salad.

Prepare the sauce

In a small bowl or liquid measuring cup, add grape seed oil, white wine vinegar, garlic powder, onion powder, sugar, salt and pepper. Whisk vigorously until you get an emulsion.

throw together

Pour the sauce over the vegetables and mix to coat. You can serve immediately, or cover with plastic wrap and refrigerate for about an hour to soak the vegetables so that they really absorb the flavors from the sauce. to serve!

Should I let my salad soak in the fridge?

Allowing this salad time to sit and soak in the fridge gives the tomatoes time to release some of their (sweet) juices and allows the onions to soften and not be so ‘spicy’ or strong. So, while you can enjoy this right away, I highly recommend letting it sit in the fridge for an hour for maximum flavor. Totally personal preference.

Variations

Tomato and cucumber salad is a fairly simple and straightforward recipe that you can change and modify to make it exactly how you like it. Since this sauce is so versatile, it would be delicious with all of these options. Here are some common ingredients I would recommend trying:

  • Avocado
  • Crumbled feta cheese
  • Fresh mozzarella
  • Fresh basil (I love adding this! So good!)
  • fresh corn
  • chopped fresh dill
  • Canned chickpeas (snoozed and washed well)
